Blender Hollandaise

Intro
The easiest way to make perfect hollandaise is to use a blender. This is the original recipe just adpated without a double boiler. The result is a light, creamy, and lemony sauce with a spicy kick. If spicy isn't for you, swap the New Orleans for Zesty Lemon Herb seasoning. Both recipes are incredible for both asparagus, eggs benedict., poached salmon, and of course steak.
Asparagus with Hollandaise sauce

Ingredients

3 egg yolks

1/4 teaspoon Dijon mustard

1 tablespoon lemon juice

1/2 teaspoon salt

1 teaspoon New Orleans Seasoning

1/2 cup butter, melted and hot

Directions

1. Add the egg yolks, mustard, lemon juice, salt and New Orleans seasoning to a blender. Cover and blend on high for 3-4 minutes.

2. With the blender running, stream in the hot butter. Serve immediately.

Substitutions
Recipe Tip:
To keep the hollandaise warm, place the blender container in a pan of hot water.
