A quick and easy meal that offers the flavors of sage, thyme, garlic and citrus. Finished with crispy prosciutto, this recipe is a keeper!

Ingredients

6  chicken cutlets or boneless skinless breasts (4-6 oz), pounded flat

2 tablespoons Turkey Rub

1/4 cup parmesan cheese, grated

6 slices prosciutto, very thin

2 teaspoon olive oil

Directions

1. Preheat oven to 350ºF.

2. Place the chicken cutlets flat on the work surface. Sprinkle the chicken with Turkey Rub and parmesan cheese. Wrap 1 slice of prosciutto atop each chicken cutlet.

3. Heat the oil in a heavy large oven-safe skillet over high heat. Add the chicken and cook just until golden brown, about 2 minutes per side. Transfer to the oven and cook for 10-12 minutes or until internal temperature of chicken is 160ºF.

Substitutions
Recipe Tip:
When I make this for company, I fry sage leaves in olive oil for 2 minutes & use them as an herbaceous, crunchy garnish
