Breakfast-for-dinner AND weekend brunch aren't worthy unless there are there are home fries. The hallmarks of exceptional home fries: coveted deep and crispy-brown edges, soft and tender insides, and they must be very well-seasoned a bit of soft sautéed onions for extra flavor and texture.

Ingredients

1 1/2 pounds Russet potatoes, peeled and cut into 1 inch cubes

2 teaspoons salt

2 tablespoons olive oil, divided

1 large onion, chopped

1 tablespoon butter

1 tablespoon Cracked Black Pepper Rub

Directions

1. In a large pot add the potatoes, cover will cold water and bring to a soft boil. Once boiling add the salt. Cook for about 10 minutes until they are fork soft.

2. Drain the potatoes and set aside. Pat dry.

3. In a large cast iron or non-stick skillet over medium heat, add a tablespoon of olive oil and onion. Cook for 10 minutes or until soft and just browned. Transfer the onion     to a plate.

4. In the same pan over on medium heat, add the remaining tablespoon oil and the butter. Once melted stir in the potatoes. Arrange in a single layer. Don't stir or disturb     the potatoes - give them 8 to 10 minutes to develop deeply coveted crispy-browned edges.

5. Flip the home fries and stir in the reserved onion and Cracked Black Pepper Rub. Cook another 6-8 additional minutes or until potatoes are browned and crispy on all     sides.

Substitutions
Recipe Tip:
Depending on the size of your skillet, you may have to cook the potatoes in batches to ensure crispy edges.
