Ingredients
- 3 pounds of chicken breast
- Salt and Pepper to taste
- 2 Tbs Olive Oil
- 1/2 onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of white wine
- 1/2 cup of heavy cream
- 1/2 cup of chicken stock
- 1/4 cup of sun dried tomatoes
- 3 tablespoons of tomato paste
- 1 tablespoon of Tuscan Seasoning
- Handful of spinach
- 1/4 cup of grated Parmesan
Directions
- Begin by seasoning your chicken breast with salt and pepper. Place it on a sheet pan and bake it at 415°F for 25 minutes, or until internal temp reaches 165 degrees.
- While the chicken is baking, in a large pan sauté your onions with olive oil. Once they become translucent, add in the garlic. Deglaze the pan with white wine once the garlic becomes fragrant.
- Next add the heavy cream, chicken stock, sun-dried tomatoes, tomato paste, and Tuscan seasoning to the pan. Mix well and let it simmer for two minutes.
- Incorporate the spinach and grated Parmesan. Once everything is mixed, add the baked chicken to the pan. Flip the chicken to ensure the cream coats all sides.
- Serve with pasta or rice for a delightful meal!
