Popeye and Olive Oil Go to Tuscany

Intro
Who doesn't love Popeye and Olive Oil? This recipe is my tribute to them - it's tomato-y, spinach-y, and cheesy. Perfecto.

Ingredients
1 pound penne or bowtie pasta
3 tablespoons olive oil
1 medium onion, chopped
2 tablespoons Tuscan Seasoning
1 pound baby spinach
1 - 15 oz can diced tomatoes
1 cup Parmesan cheese, grated
Directions
1. In a large pot of salted water cook the pasta according to the package directions to al dente. Drain. Set aside.
2. Meanwhile, in a large sauté pan over medium heat, add the olive oil, onion and Tuscan. Cook until onions are translucent, about 5 minutes. Add in the spinach, and cook until wilted, about 3 minutes. Stir in the tomatoes and cook for 2 minutes.
3. Stir in the pasta to the tomato-spinach mixture, stirring to combine. Serve with Parmesan cheese.
