Ingredients

1 sheet puff pastry

1 tablespoon olive oil

2 tablespoons Mediterranean Seasoning

1 cup grape or cherry tomatoes, cut in half lengthwise

4 ounces parmesan cheese, grated or shaved

1 tablespoon olive oil

salt and pepper

all-purpose flour, for the work surface

Directions

1. Defrost the pastry according to package instructions.

2. Pre-heat oven to 425°F. Line a baking sheet pan with parchment paper or a silicone baking mat.

3. On a lightly floured surface, roll the pastry into a rectangle. Place the pastry on the prepared pan.

4. Prick the puff pastry all over with a fork. Brush olive oil evenly over the pastry avoiding the edges.

5. Sprinkle the oiled pastry with Mediterranean seasoning, Parmesan cheese, and then the tomatoes. Season to taste with salt and pepper.

6. Bake for 20-25 minutes or until golden brown and puffed up. Let the pastry sit for 5 minutes before slicing.

Substitutions
Recipe Tip:
If you prefer a crispier top, place the finished pastry under a preheated broiler on a middle rack for 1 to 2 minutes. Watch carefully the pastry can burn quickly.
