Za'atar Eggs in Puff Pastry

Growing up my mom always made 'eggs in a basket'. This is a egg fried in a hole in a slice of bread. I still love this to this day but updated the recipe complete with Middle Eastern flavors.
Baked eggs in puff pastry with pancetta and Za'atar seasoning.

Ingredients

3 tablespoons Za'atar Seasoning

12 puff pastry shells, thawed

12 slices par-cooked pancetta

12 large eggs

Directions

1. Preheat oven to 400°F.

2. On a rimmed baking sheet lined with parchment paper or a silicone mat, arrange the 12 thawed shells 2 inches part. Bake for 8-10 minutes or until shells are just risen.

3. Remove the shells from oven and peel away the perforated center. Press 1 piece of pancetta into the shell forming a cup. Carefully crack an egg into the pancetta cup. Top with 1/2 teaspoon Za'atar. Repeat with remaining shells.

4. Return to oven and bake for 10 minutes or until egg white is set. Serve immediately.

Substitutions
Recipe Tip:
Par-cooked bacon can be used in place of the pancetta.
