Blackened Chicken

Intro
Blackened does not mean burnt, rather is when a protein is coated with a seasoning and when cooked it takes on a "blackened" color. This one-skillet (preferably cast-iron) is just the ticket for those who like tender, juicy and spicy chicken.

Ingredients

2/3 cup Blackening Rub

6 boneless skinless chicken breasts

2 tablespoons canola oil

6 lime wedges

Directions

1. Preheat oven to 350ºF.

2. Sprinkle the Blackening Rub over both sides of the chicken. For heat lovers, dredge the chicken.

3. Heat a large cast iron or oven-safe skillet over medium-high heat. Add oil and when almost smoking add the chicken and cook until browned, about 4 minutes on each side.

4. Transfer skillet to the oven to finish cooking chicken for 10 minutes or until internal temperature reaches 160ºF. Serve warm with a lime wedge.

Substitutions
Recipe Tip:
Opt for thinly sliced chicken breasts or cutlets. Pan sear each side for 3-4 minutes.
