Eggplant Parmesan Stacks

My eggplant Parmesan pizza stacks are easy to make, and it satisfies my desire for a hearty meal without a lot of effort or being laden with extra calories. Loaded with savory red sauce and oozy mozzarella cheese – it just doesn’t get any more delicious than this!

Ingredients

2 tablespoons Pizza Seasoning

3 cups panko bread crumbs

2 cup parmesan cheese, grated

1 teaspoon salt

2 medium eggplant, cut into 1/2 inch rounds

3 eggs, lightly beaten

2 cups red sauce

2 cups mozzarella cheese, grated

Directions

1. Preheat oven to 400°F. Line a sheet pan with parchment paper. Set aside.

2. In a bowl mix the Pizza Seasoning, bread crumbs, parmesan cheese, and salt.

3. Dredge the eggplant discs into the beaten eggs and then into the panko mixture. Place onto the prepared pan.

4. Bake for 20 minutes. Flip and cook until golden brown, about 15 minutes.

5. Remove from oven and top each disc with red sauce and mozzarella cheese. Bake for 10 minutes or until cheese is meltd and golden brown. If desired broil for 2-3 minutes. Serve warm.

Substitutions
Recipe Tip:
To make this recipe family style -arrange the baked eggplant rounds in a 9x12 inch baking dish with 1/4 of red sauce on the bottom to prevent sticking. Then follow recipe.
