Eggs in Hash Brown Nests

Ingredients

3 medium russet potatoes, baked, and cooled

2 tablespoons Cracked Black Pepper Rub

1 cup gruyere cheese, divided

12 small eggs

6 slices bacon, cooked until almost crispy

Directions

1. Preheat oven to 425ºF. Grease and flour a 12 cup muffin tin. Set aside.

2. Peel and grate the potatoes with box grater. Add to a large mixing bowl.

3. Fold in the Cracked Black Pepper Rub, and half of the cheese. Divide the mixture evenly into the muffin cups and press lightly into the bottom and up the sides, forming a cup.

4.Bake for 15- 20 minutes or until the edges have browned.

5. Crack an egg into each hash brown nest. Sprinkle with the remaining cheese, and the bacon. Bake for 12-15 minutes or until egg whites are just set. Cool in pan 5 minutes before removing. Serve warm.

Substitutions
Recipe Tip:
Options are endless - a few of my favs are adding sautéed onions, peppers, mushrooms and/or spinach; swapping out for gruyere cheese, or sausage. Or topped with smoked salmon.
