One-Pot Pasta with Chicken, Onions and Olives

Ingredients

2 tablespoons Mediterranean Seasoning

12 ounces pasta (linguini, spaghetti, fusilli or your favorite shape)

1 cup rotisserie chicken, chopped or shredded

1 cup olives, chopped

1 cup red onions, diced

2 tablespoons olive oil

1 teaspoon kosher salt

4 1/2 cups water

1/4 cup parsley, chopped

1/2 cup Parmesan cheese, grated

Directions

1. In a large pot combine all ingredients.

2. Bring to a boil and then simmer until pasta is al dente and most of the water is absorbed, about 10-12 minutes.

3. Serve warm with Parmesan cheese.

Substitutions
Recipe Tip:
Swap out the chicken for oil packed tuna, cooked chicken sausage or shrimp
