Poké Bowl

I love this easy, healthy and uber yummy bowl anytime of year. I must have lots of Tamari and pickled red onions - for me this makes this bowl.
Poké Bowl with ahi tuna, mango, edamame and rice.

Ingredients

1 lime

2 tablespoons soy sauce or Tamari

2 teaspoons rice vinegar

2 teaspoons toasted sesame oil

2 tablespoons Toasted Sesame Ginger or Poké Bowl Seasoning

12 ounces sashimi grade fish, tuna or salmon

2 cups rice, steamed

1 avocado, peeled, pitted and diced

2 scallions, diced

1/2 cucumber, quartered and thinly sliced

Additional optional ingredients: mango,jalapeño slices, edamame, carrots, chopped nuts, seaweed salad, pickled ginger, pickled red onions, sriracha, fried wontons and everything else you can dream up

Directions

1. Cut the lime in half. Juice one half and slice the remaining in wedges.

2. In a mixing bowl combine the lime juice, soy sauce, sesame oil, and 1 tablespoon of the Toasted Sesame Ginger (or Poké Bowl Seasoning). Stir to combine.

3. Cut your fish into 1/2 pinch pieces and toss into the marinade. Set aside.

4. Divide the rice between two serving bowls. Arrange the avocado, scallions, cucumber and any other topping around the edges. Add the marinated fish to the center of the bowls.

5. Sprinkle with the remaining tablespoon of Toasted Sesame Ginger (or Poké Bowl Seasoning). Serve immediately.

Substitutions
Recipe Tip:
For extra richness, combine 1/4 c mayo, 1 tablespoon sriracha, and 1 teaspoon honey. Spoon over the Poké Bowl.
