Sheet Pan Pork Tenderloin and Sweet Potatoes

Pork tenderloin is a canvas for flavor. Pungent ginger and bright citrus infuse lean tenderloin with intensity of flavor. The tender sweet potatoes and caramelized red onions round out this yummy one-pan wonder.
Sheet Pan Pork Tenderloin and Sweet Potatoes

Ingredients

2 medium sweet potatoes, peeled and cubed

1 red onion, chopped

2 tablespoon olive oil, divided

2 teaspoons salt, divided

1 teaspoon black pepper, divided

2 tablespoons Ginger Citrus Seasoning, divided

1 orange

2 pork tenderloins (about 12 ounces each), trimmed

Directions

1. Preheat oven to 450°F.

2. On a rimmed sheet pan add the potatoes, onion, olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper and 1 tablespoon Ginger Citrus seasoning. Toss to coat. Roast for 15 minutes or until the sweet potatoes are almost tender.

3. Reduce oven temperature to 350°F.

4. Place the pork on top of the sweet potatoes. Drizzle the tenderloins with the orange juice and  season with the remaining teaspoon of salt, 1/2 teaspoon pepper, and tablespoon of Ginger Citrus seasoning. Return to oven and roast for 20-25 minutes or until the internal temperature of the pork is 145°F.

5. Set oven to broil. Broil pork for 3-4 minutes or until it is brown and crusty. Rest 5 minutes before slicing.
