Cracked Black Pepper Rub Grilled Vegetables

Ingredients

1/4 cup olive oil

2 teaspoons Dijon mustard

2 tablespoons Cracked Black Pepper Rub

Pepper Garlic Grilled Veggie Seasoning

1 bunch asparagus, trimmed

1 pound cherry tomatoes

6 carrots, sliced lengthwise

1 yellow squash, cut into 1/2 inch slices

1 zucchini, cut into 1/2 inch slices

1 red onion, cut into wedges

Directions

1. In a large bowl whisk together the olive oil, Dijon mustard and Cracked Black Pepper Rub (or Pepper Garlic Grilled Vegetable Seasoning).

2. Add in the prepared vegetables, tossing to coat.

3. Prepare grill to medium-high heat. Grill veggies turning occasionally until lightly charred, about 10-12 minutes.

Substitutions
Recipe Tip:
Vegetables can be skewered for a fun presentation. If using wooden skewers, soak in water for an hour to prevent them from burning.
